FOOD SAFETY FOR MERCHANT SHIPS
Food law requires all food businesses (including ships) to show (in writing) that the food they make is safe.
In order to assist with this requirement in a very simple way Manchester Port Health Authority have developed a pack specifically aimed at small cargo vessels. This pack is currently in draft format, but you are welcome to download and use it until the final version is available.
The pack contains 4 posters, one for each of the main food safety areas. These posters are aimed at raising awareness of the main risks in a simple, easy to understand manner.
A number of log sheets are also provided. These should be completed by the cook to demonstrate that control measures are being used, for example by recording the fridge and freezer temperatures and the actions taken when something went wrong. The log sheets also act as a prompt for action where there has been a problem.
How do I use this pack??
This pack should be used by the cook and kept in the galley. The posters can either be placed on the wall for quick reference or be kept in a file. The tables should be looked at by the captain and the cook and the control measures used on the ship should be discussed and implemented to ensure that the food produced is safe.
The temperature record sheet should be used by the cook to show that he/she is using the control methods specified e.g. making sure that the fridge is operating at the correct temperature by checking daily and recording this on the log sheet.
If anything goes wrong, the daily log sheets should be used to record the problem and what you did to resolve it. This helps you prove that the food is safe to eat.
The diary sheets should be audited by the captain/chief officer as part of the weekly galley inspection to ensure that they are being completed.
